How to Make Cheesy Chicken Enchilada Soup

Ingredients

  • 1 1/2 lbs Chicken
  • 15 oz Diced tomatoes
  • 1/2 Cup Evaporated Milk
  • 1 Pack Soup Mix

Instructions

  • Add 1 1/2 pounds of chicken to 3 quarts of cold water
  •  Bring this to a boil
  • Slowly add in soup packet along with one 15oz. can diced tomatoes, stirring to remove and prevent lumping
  •  Cook about 15-20 minutes
  • Add 1/2 cup evaporated milk and let simmer 5-10 more minutes.

Notes

Ladle into soup bowls, garnish with shredded cheddar cheese and a touch of sour cream. Serve with your favorite cornbread, crackers or tortilla chips. Makes 4 quarts of soup so it serves 6 – 8 people, big bowls of soup, second helpings.

    I received this soup package as a gift and almost forgot about it. Then, when cleaning out my cupboard, I saw the packet and decided to give it a try. Wow! This is outstanding. Great taste and so easy to prepare. I would suggest that you cut your chicken in small chunks - no directions on package for how to cut the chicken. My chunks were too large, but I cut them down to size before serving. I added cheddar cheese and sour cream to each serving bowl. I heated tostitos in the oven while the soup cooked - great addition to this delicious broth. I Strongly recommend this soup - everyone at dinner loved it.

    I made this soup for family soup night on Christmas Eve and it was a big hit!!! I added onions and twice the amount of evaporated milk. I used Rotel instead of just diced tomatoes. I also used a container of chicken stock in place of some of the water too. Everyone loved it and ate it all up!

    Loved it! Added 1 can of corn, 1 can creamed corn, used chicken broth for half of the water, and chopped onion.

    Recipe is a little off, they forget to put you need to add cheese. Tasted just a little off then I realized and added 2 cups cheese. Perfect! Also, calls for 3 quarts, I used 2 quarts of water, thicker, much better.

    Very good want to order more, but the cost of shipping is stopping me.
    I added frozen corn, and that was tasty, could add anything else. I think you could shred carrots and sneak in some extra nutrition,
