River Road Chili
A Louisiana style chili that combines the finest spices to create a hearty chili mild to medium in heat, and rich in flavor. Just add meat, tomatoes, tomato sauce, and water. Use any choice of meat you like, beef, deer, chicken, or even vegetarian with beans. All of the basic chili ingredients are provided so you can add whatever flare you like. Brown 3 pounds hamburger meat or chili meat. In meantime bring 3 quarts water to a boil in large pot. Once meat is browned, mix in chili seasoning package with meat and blend well. Add this mixture to boiling water and add 1-15oz. can of tomatoes and 1-15oz. can of tomato sauce. Simmer for 20-25 minutes. Yield: 20 cups.
If you prefer your chili to be real thick & hearty, add less water. Rotel tomatoes can be substituted for regular tomatoes if you prefer a zestier flavor. Beans of your choice may be added.
