Instructions: Preheat oven to 350 degrees. Mix package of muffin mix with 2 large well-beaten eggs, and l/2 cup of melted butter. Pour into 24 mini muffin cups that have been coated with non stick baking spray. Bake at 350 degrees for 20-25 minutes. Cooking time may vary according to oven and altitude. Remove from pan immediately onto wire rack.
Yield: 24 mini muffins.
