A southwestern style soup that is thin and brothy in texture yet rich and inviting in flavor. A bit of spice provides the perfect kick. Just add chicken, tomatoes, and water. Be careful and watch out for the bandits who may try and steal your soup.
Add 1 1/2 pounds of chicken to 3 quarts of cold water. Bring this to a boil and slowly add in soup packet along with one 15 oz. can diced tomatoes, stirring to prevent lumping. Cook about 25 minutes from this point.
Ladle into soup bowls, garnish with shredded cheddar cheese or your favorite cheese. Serve with fried corn tortillas, your best cornbread or crackers. Yield 17 cups.
